Simple thermodynamics, my friend. Big mass of circulating water inside thick cast iron head vs. tiny mass of stagnant water inside thin iron pipe tee.

The water in the tee will never reach the same temperature as the water in the head because it can only gain heat by conduction, and being out away from the engine, it will loose heat faster as well. In other words, the hot water no longer flows past the sensor bulb.

You can prove there's nothing wrong with the temperature gauge by temporarily putting the bulb back into its original location.
