Farmall 300 Questions

Couple of questions about my 300 Farmall. I hear people say you should shut off the gas at the carb when you turn off the tractor. I grew up with an M, MTA and a 300U and we never turned off the gas and never had a problem that I was aware of. Should it be shut off and why? Also my hydraulics is not lifting again with a load on it. Couple years ago, I requested help from you guys and finally just ended up taking it to the shop. Turned out I had a o-ring from one of the valves lodged in a valve keeping it from sealing. Don't use the tractor much so can't believe that happened again. Started raining so I put the tractor up, could low fluid level be the culprit? Next step, if isn't fluid level, is to check the cylinder, I guess. TIA for any help.
