Your hydraulic oil should get pretty warm, but not so hot that you can't touch the pipes, etc. The oil is supposed to just circulate through the pump at low pressure unless a control valve is toggled, or you move the steering wheel. The loading, pressure relief, and priority (for your power steering) systems are a bit complex to try to describe here, and you would probably be best off to get some manuals before trying to work on them. You may have a cross-check valve on your Fast Hitch control valve (rectangular block which attaches to the bottom of the control valve - hoses to/from the cylinder attach to it). These things introduce some interaction between the pressure and return lines, and can tend to chatter sometimes. You might try just cracking the control valve, especially when movement is just starting, and see if that makes a difference.
