Pete - The thermostat is very easy to access and check. It's located in the housing directly above your water pump. Two bolts hold the halves of the housing together and you can remove the thermostat. You may have to drain off some radiator fluid to avoid a mess. Take your old thermostat in the house and place it in a pan of water on the stove. They're supposed to open at 180 deg. if yours doesn't thats your problem. I'm betting your water pump is ok from your description. Hope this helps
