12V Conversion - tuning the system

I just changed my Farmall 300 over to a 12V system. Used the Delco 10-SI/3-wire alternator with a 12V/0.2A lamp in series with the excitation/sensing) line. The system works fine but seems to me it charges too much. Is the 10-SI internal voltage regulation dependable or should I put a toggle switch in the sensing line to "turn off" the alternator to prevent overcharging? Or should such a switch go in the main power leads to the alternator? Also, what alternatives are available to protect the IH 20 Amp Ammeter? Have not seen one for sale that goes above 30 amps(think the alternator is rated at 63 amp). Considered making a shunt for the ammeter, but the scale will be really an oddball one. Would appreciate hearing others' experiences and opinions on this.
