Hauled a couple of loads of rock last week and went back for another, pulled up to get loaded and truck started steaming. Filled the cab, coming out from under hood. Thought I had broke a heater hose. Checked hose ok, restarted and white smoke out the exhaust and crack in exhaust manifold so bad I thought they were going to call the Fire dept. No bubbles in radiator, oil ok, ran fine ideled fine. The longer it ran the better it got, been running fine since. What happened? Surrely can't be a good sign. Oh it's a 350 engine.

No, It wasn't hot. It was blowing steam (smoke) out the exhaust. It seemed like it was more on the right side. Has dual exhausts.

You probably got it hot enough that the radiator cap "vented", spraying the engine with coolant, making the smoke and steam, and wetting down the ignition system so it ran rough 'til it dryed out.

Does your truck have the plastic coolant overflow tank above the radiator? If so, is it cracked as many of them are, from age?
