I have a 12 volt generator that I bought at salvage yard. Is there a way that I can bench test it to see if its putting out?

This is a generator, not an alternator.

What I was hoping to do was put it in a vice and spin it with a drill, will this work?

Yes if!!!
There are three possible generators, and unless we know which, setting up a test would be unlikely. We need to know what it came off of, what numbers are on it, and model/brand. There are three brush generators, two brush "A" type and two brush "B" type systems. Checking them is way different. JimN
