Well the garden is finally over for me. Pretty much this year, total loss. I was wondering if anything can be done with green roma tomatoes, as far as canning. I am getting ready to brushhog the garden, and disc it. I really dont want all of the leftover tomatoes to go to waste. Thanks

Planted 24 roma plants, between end blossom rot, japanese beetles and weeds got 4 tomatoes total. Lots of watermelon, from 4 plants had 12, boy am I (and everyone else) sick of watermelon. Northern IL

Matt,
You've already been told everything I know.

Not to make you feel bad, but thought I'd mention that I'll be picking ripe tomatoes for another month here. We had our usual great crop. Tomatillos, always later, look like they're trying to conquer the world. I only cage to 5' high and then they sprawl.

Been told that this was a poor year for tomatoes here, but my plants produced as well as ever. Raised beds with soil I've been working on for several years is paying off. Tried no-till this year and will be doing it again. Got so many volunteers that I'm not going to start any indoors for next year.

Compost is the key. I'm getting pretty close to permaculture with cilantro and arugula and snow peas mixed in with the tomatoes. Everything self-seeds. Read recently that my crop mixture is a form of green manure but I don't know how it works. Just growing what we want to eat.

Hope your next year is better.

Pick off the nice green tomatoes and spread them out on news paper on the basement floor.....check them every 2 - 3 days....you will have a few bad ones, but you can be eating nice red tomatoes up till thanksgiving..... ..sure wish I had a couple hunderad ..... ..I love tomatoes..... Don

My garden has a lot of green matos also, been something wrong this year since they where slow to get ripe this summer and now I have all sorts of green ones and they also aren't getting ripe. Last ripe one I picked was way back in Aug.

Just when I think I am the only one with problems, others step in and share theirs. And I worked so had this year to work the ground, and tonight I brush hogged the garden, then pull a disc and a drag and the ground turned into powder. Its what I wanted at the beginning of the season, but it was too wet.

Matt, I did find a resipe for green dill pickles on one of my canning books. Guess there sort of dill pickles but made with matos instead of cucumbers. If you would like it let me know by e-mail and I'll scan a copy of it

pickled green tomatos, in a crock like saur kraut, few inches of cut up matos, big handful of salt, repeat, weight down with a plate and a clean covered brick, few weaks, you talk about good.

I was maybe hoping for green tomato salsa to can. I have a clothes basket full of green ones. We planted over 90 roma plants, got 5 quarts of spaghetti salsa, nothing ever ripened, or grew at that. Its a little upsetting.

A couple years when we wanted to stretch the fresh tomato season out a while, I did what my Dad always talked about....(wish I had a pictures)

I dug/pulled the vines and hung them upside down (because it was easier) inside the garage. The tomatoes proceded to ripen "on the vine" for 4 to 6 weeks after we had a killing frost.

Rusty's suggestion also works, though!

I have also had some pretty good green tomato salsa, but I don't have the recipe.

You can slice them, bread them and fry the slices, a lot like eggplant.

You can wrap them individually in newspaper and keep them in a dark cool room and have some for Christmas. You do need to check them every few days to extract those that are ripening so they don't rot.

Pick those tomatos, bring 'em in the house and set 'em in a window sill. They will ripen up just fine.
My tomatos are just about done also, but I'm still picking green beans, pretty amazing for October 6th.
