I was given a 1970's Ford 3000 with no battery. It was jumbed off from a pickup. Two questions:
1-Is there any reason that I cannot use a truck battery eventhough it is setup for a much larger tractor battery?
2-It appears that the positive cable goes to the starter and the negative to the solenoid. Is that the correct hook-up?

The tractor should be negative ground, unless somebody changed it. As far as the battery is concerned, the 4DLT is the correct battery. A standard 4D is too tall, as is the modern group 31. I think the only other batterys that will fit under the hood are the car type which have neither the cranking amps, reserve capacity, or the ability to withstand the vibration in that environment. So, the 4DLT is the best bet in my view. I would expect no more than 5 years service from the NewHolland/Exide batterys. 3-4 is more typical. So if you have another favorite brand, I think I'd try that. I'm partial to Delco myself. HTH.

3000"s were negative ground. The battery for a gas is a BCI group 17TF (NH p/n F120), the battery for a diesel is a BCI 4DLT (NH F150). A truck battery may work for a GAS, but I would recomend a battery designed and built to take the vibration and heat stress of tractor usage. Remember that cranking amps is a momentary rating and those bigger tractor batteries will crank LONGER.

As long as the battery is the correct voltage for your system and it fits without the terminals touching an metal parts causing a short the truck bat is fine. Mine is a diesel, so I looked up the wiring and it appears all models are negative ground with the positive bat terminal connected to the starter solenoid. The negative cable may appear to connect to the starter motor but it hooks to earth ground, engine block. At least thats the way mine is and how it is shown on page 56 in the"IT", shop service manual. The, B, or Batt, terminal on your voltage regulator also connects to the starter solenoid at the same location as the battery + or positive cable.
