Being kinda familure with the "not kilned yet bricks" we call "dirt" here....It ain't good news...

Coupla options - dig a hole (SOMEhow!)- on an angle might work better, add the hold down and enough concrete to fill the hole - about a bag and a half per hole or so should do it - or what ever it takes to fill the hole. Rocks and old bricks make good filler.
Yer PHDs will dig the hole....eventually! Check the tips often - gotta hammer them back straight once in a while due to the rocks you'll hit.
Don't think that adding water will help - it'll just make the clay too slick to stand up on and it'll stick to your tools even worse!
Any chance you have access to a helpful neighbor with a small tractor and an auger who's willing to help? Dig the holes with that. There's other possibilities there but unless the guy with the tractor is good at fab work & shade tree engineering, that'd be best left alone!
Good luck - what part of NC are you in? I'm near Lincolnton - just south of Hickory.

I met a guy who set up mobil homes in trailer parks, he had a hand held electric pipe threader with a custom adapter for putting them in. Man was that a slick set up.

It is a problem sometimes. The first thought is to find the biggest pry bar you have that will fit through the eye of the anchor, but if the ground is really hard, you will only succeed in twisting the screw anchor. Your best option is to probably get out the post hole jobbers and dig a hole.
