I did somewhat the same thing. A local plumbing supply practically did the job for me. This was one of the better stores that serves licensed plumbers. They took my information on size, walls, insulation, etc... and sent it to their supplier and got back a layout diagram as well as a materials list. The lay out was a huge help and the materials list was almost perfect. I used a PEX tubing and it was very inexpensive. Not sure what to tell you on using a hot water heater for a source though...I have a small boiler that meets the BTU needs of the system...you could try to rig up a basic circualting pump and tweak it as needed. I put my system on a 4-6" crushed gravel base, 1-2" of sand, fan fold insulation, 6 mil vapor barrier, 6x6 wwm on stilts with tubing zip tied to it and zip tails trimmed. I was told by the tubing manufacturer that I did not need to put much insulation and the the fan fold would be fine...they told me more is not always better and from my results I would agree.
