what can I do to keep from getting water in the crankcase of my air cooled IR compressor. I changed oil a month ago and took the cover off to remove all the water/oil, it"s time to change again. Compressor is outside in small enclosure on a slab. Here in N. CA it has been rainy/foggy high humidity for the last couple of months.

Not much. Damp air and cool running conditions lead to moisture build up. If this is an older Type 30, it is designed to unload into the crankcase, via the line leading from the high pressure cylinder, to the back of the oval shaped cover plate. There is a centrifugal unloader and needle valve arrangement that unloads air from the head and intercooler into the crankcase, for loadless starting. If you feel so inclined, you might take this line and feed it to a needle valve type unloader on a pressure switch, allowing the air to dump to atmosphere. IR used flare fittings on most of their equipment, so you will have to swap out the fittings to ferrule type to use it with a pressure switch unloader. You will also have to plug the empty port on the back of the crankcase.

If this is not an older Type 30, you may just have to live with it until the weather warms up/dries out. This is a good example of the type of issue you face when installing compressors outdoors.
