1985 F 250 Ford how can we change the engine bearings with out taking the engine out of the truck.

IF you can get the oil pan off and have adequate access to everything it's fairly simple to replace the rod and main bearing. On the rods just take them loose and roll out the old top half and roll the new one in. On the mains SLIGHTLY loosen the main caps and then as you remove each individual main cap you can slip the old top half out and roll a new one in. Their is an old trick of using a cotter pin with the two legs bent at 90 deg forming a "T" inserted in the oil feed hole, then rotate the crank and the top half will spin out. All this may be in vain if there is crank or other damage as a new set of bearings will be wiped out again. On that old of a truck depending on mileage you may be urinating into a stiff breeze. LOL
