What do you people think about Old Hickory Knives? Looking for something that will hold an edge, and quite easy to put an edge back on. General farm use butchering ,hogs and chickens, Thanks in advance.

I am pretty sure you can buy Old Hickory at Wal-Mart. You may try at least one super high quality knife such as a Henkels or Wusthoff Trident. I have a set of Henkels and they are the best knives I have ever owned, they do make several different levels of quality....get the best and they will last a lifetime.

I have several "weck@Mueller" knives that were ahh, relieved from duty at Rath packing plant here in Waterloo Ia. I think I got them in 1979. Best skinning knives you ever got a hand on. They are getting pretty thin by now but, they hold an edge like you would not beleive.

I was raised on Old Hickory knives, the old ones were great! Don't know about the new ones, Seen my grandfather temper a few, he would heat them up and stick them in fresh hot cornbread, of course they were clean. Some people uses hot oil and let them cool in.

Dwight: We have several that have seen many years of duty doing on-farm butchering--usually cows. However, one thing to watch out for--I have seen a few knives branded "old hickory" that were cheap pieces of junk--I don't know if someone got handy with a wood-burning stamp or what, but they were not nearly the quality of our old ones.
