I have Hotsy brand steam jeny(mod.0520) that works well, but shoots a flame about 3'high out the chimney.Does anyone know of a quick fix like maybe adjusting the air intake on the gun to see if this will change anything? The coils look a little dirty and sooty, and I did notice some white smoke from under the unit.Sounds DANGEROUS! oh well " break out the band aids"

Sure it's dangerous. I've seen them do that when they get a fuel leak or incomplete combustion allowing excess fuel at. It can also burn all the insulation out, a bad thing allowing a LOT of heat where it is not intended to be.
Look for problems like fuel hose spliced in where there was originally hard line, loose or worn out fittings or an igniter/fuel nozzle problem.
