Hey Spuds,
I am not a seasoned professional either but We just put on the same tire on an 11 inch wide pressed steel wheel on a WC Allis. We were running about 8 PSI and it hooked up very well. It is really going to have to be a trial and error procees to find out what is best. This will vary with temperature, and track condition. It would probably be good to go to a "fun pull" where you can just keep hooking and adjusting pressure to see what works best. Try to keep a record of track conditions and air pressure so you will know what to do each time you go to a pull.
