I've got my 30 stripped down to the frame & setting on blocks intending to sandblast and paint. Should I be putting new seals in the axel ends and/or bearings in the front, or checking and restoring anything else at this stage?

The rear axle seals are a project to install, but most likely a least one hub is loose and the seal will leak sooner or later. If the hubs are already loose you can remove the large nut and it will come right off. If the hub is not loose you will have to remove the axle and hub together and have them pressed apart. To get the axle out you have to remove the PTO and remove the final drive gears. It can turn into a big project quickly.
Good Luck!

Mine needed both of the things you mention.
If yours has loose cast hubs on those rear axles
you will need more than new seals there.
