I JUST HAD THE CAM BUILT 10% OVER AND WAS WOUNDERING IF I TOOK .125 OFF THE HEAD WOULD I BOTTOMOUT THE VALVES?

No, you are going to set the valve lash at what ever the cam grinder recommend or where ever you get the best torque so however far you cut the head down is of no concern. The only differance which really is not a problem is the rocker arms aren't at the factory geometry. At 10% there is not going to be enough valve overlap to worry about hitting a piston unless you add domes.

You probably havn't added a higher ratio rocker either so you still probably are not going to compress the valve springs that much more.
