On steep downhills my '51 bumps out of first. Does not happen going up no matter how steep. Any guesses?

I recently replaced the detent ball spring and it has helped with the jumping out of gear problem. You can get to the spring by lifting the shifter cover and it will be toward the back of the cover.
I took the spring to the hardware store and got a similar size only a little longer. If you put too much pressure on the ball it will make for difficult shifting. good luck

When going downhill, the engine is being utilized as a brake. The forces on the 1st gear change from a driven gear to a driving gear. Due to the cut of the gears and wear there will be some thrust in the wrong plane. (forward in this case) You may have some worn parts such as the shift rail, ball and detent...etc..

Thanks fellas. I figured it was due to the wheels pushing on helical gears, but a second opin helps. I've done some engine work, but trannys scare me for some reason. cluck, cluck.
