Happy Thanksgiving, everyone!

In my typical procrastinating manner, I've waited until today to decide how to season/inject/rub the 12-pound turkey we'll deep-fry later this afternoon. I'm a novice at this--I've fried fish, cooked shrimp and lobsters, etc. in the outdoor cooker, but never a turkey. ED-IL gave me some good hints on the actual cooking the other day (don't think I'll have a problem with that), but I forgot to ask what people use to season the bird before cooking. I'm tending toward a Cajun Rub that's on the FoodTV.com website, but what have y'all used before?

I use SPF-45 to get that relaxed, Caribbean "presentation" for my Thanksgiving bird.

Never done the fry thing but I have done a bit of smoking and I use the Cajun Injector too. I wonder about the oil "scrubbing" the seasoning off the bird. Have you looked at the Cajun Injector web site? They are pretty good to deal with and they may have tips.

I saw Emeril do fried about a year ago so there may be an archived bit from that episode on foodtv.

Found a website that suggested using equal parts Italian dressing and dry white wine as an injectable mix. I've got the syringe, and since my in-laws are coming over today (read: bland taste buds), I think I'll reserve the hot rubs for another time.
