moisture in crankcase-thermostat problem?

I am getting moisture in my '53 U crankcase. I check the crankcase before I start it up (unscrew the oil drain plug to the very last few threads and let water, if any run out). I store the U in a shed and I notice that after running 8+ hours and putting it back in the shed, I remove the breathers and see that there is condensed moisture (big drops of water) at the base where the breathers seat onto the engine. I thought all the moisture should be burned out by the exhaust. Could my thermostat be shot (stuck open)? If it is, there are two temperature thermostats and I do not know which one to replace it with. Is there any trick to physically replacing it, like compound or gasketing material.
Any advice? Thank you.

Knute - I had the problem when I got my '47 UTU. Turned out the previous owner had removed the thermostat and the engine was running way too cold.

Installing a new 170 deg t'stat solved the condensation problem. Also found the engine ran better (and used less gas) with a working thermostat in place.

No special tricks to replacing the t'stat. I simply used a little Permatex black stuff on the gasket before bolting the t'stat housing back onto the radiator tank. One suggestion: If you don't have a working temperature gage on your U I'd highly recommend installing one!

I beleive that water can get into the crankcase through the water pump. Other readers may know the solution.
