I realize that the 72 is an all-fuel, and the 71 is a gas, but what are the differences in the two? Will one outperform the other in stock fashion as far as running or power? Thanks

Todd, the big difference is the 72 uses a tunable [replaceable] economizer plug & the 71 uses an internal [fixed size] economizer orifice.
~The 72 was designed to meter heavier fuels than the gas only 71.
~As far as power goes, you should probably ask the pullers over on the puller board. I haven't ever dynoed the 71 v/s the 72.
~You might want to call Roberts Carb, I'm sure Robert could tell you all you needed to know + some....
