I have a ford 850. Have two stabilizer bars and hooked them up for my rear blade. Does this affect the height, speed of using the rear blade? Seeme a little sluggish up and down, and tends not to hold on the position control lever in the up position.

If properly installed, the stabilizer bars should not affect the up/down function of the 3 point hitch. Check to make sure the mounting pin under the axle is lined up with the lift arm pin. They need to be very close to even so that the stabilizer bar and the lift arm are pivoting from the same point. Otherwise things will bind up and you'll bend or break something.

Many of the aftermarket stabilizer bar kits have a mounting bracket under the axle with 4 different holes so that they can be used on more than one model of tractor. If that's the kind you have, make sure the pin is in the right hole.

If you have the original style mounting brackets, be careful they didn't come off an 8N. I don't think the 8N brackets have the pin in the right place for an 850.

do you have advice on which bracket hole to choose for the pin on an 850?

Best thing to do is look at it and choose the hole that best lines up with the lift arm pin in the differential housing. I'll try to remember to look at my 850 tomorrow in the daylight and see which hole it's in.
