Why would the tailgate suddenly start opening in the middle of a bale after baling about 35 bales with no problem. The fluid levels in the tractor are OK, there are no obvious leaks in the system, and the tractor has more than enough horsepower to operate the baler.

Check the latch to make sure the latch is fully engaged. If the latch is in proper order close the tail gate and pull the lock safety valve and go bale a bale. If the gate stays closed you do not have a by pass in the gate cylinders. If so you will need to rebuild the gate cylinders. There are two MFG's prince and Energy and they take different rebuild kits. If the gat stays closed then you have a bad cushion valve and or a bleed by in your tractor hydraulics. It is easy to check the tractor by putting a pressure gage on the opening side and see if there is any pressure without moving the hydraulic valve control lever. If there is any pressure you have a problem in your tractor hydraulics.
If I was guessing it is a 70% chance you have a bad cushion valve. It is the square valve in the tongue of the baler. A replacement is around $100.

Because the latches aren't dropping down on the axle properly....most likely reason is the gate is bent just a bit and keeping the latches from dropping into place. The hydraulics don't hold the gate shut, the latches do.

Is the little rod popping up to show its latched?

Close the gate all the way and make sure latches are dropping over center on the axle, they most likely aren't. Look under the baler and see which side is high or low, then try chaining down the high side and opening the baler to bend it back level, or try closing the baler on a block of wood if one side is closing before the other, or chain the gate down and use a bottle jack on a 4x4 piece of wood shoving up against the arms on the side of the gate to get it level and latching again...

I just went thru this last fall on my 605h, a hydraulic hose blew on one of the gate cylinders and the gate got bent a bit...took some time looking at it to figure out where it was bent to get it straightened out....
