I bought a TO30 at an auction and found it had no thermostat so I ordered one from a local tractor place. As I went to install it I noticed that the thermostat they sold me is stamped 180F on what I am guessing is the temp sensor part. I thought these are to take a 160F type. Will a 180F work or will it run too hot?

yeah that's good. Starts to open @ 160, fully open @ 180. Sounds like that's what you got.
Don't forget to install it facing the right direction, look for a direction of flow arrow in the side, that arrow should point towards the radiator.

Warmer is GOOD for the engine, so long as it doesn't heat up to boiling.

For a hobby or lightly-used tractor, having it run warmer is especially good, 'cause will help keep moisture from combustion byproducts from building up in the crankcase, and making sludge and nasty stuff that damages bearings, etc.
