Take the top of the gearbox off first and check the plungers and springs don't split the tractor before checking them. If they are ok you can either fit new springs or shim the old one that is jumping out to give it more pressure. If that doesn't cure it,possibly worn teeth on the sliding couplings, worn selector fork faces or maybe even bent fork so not pushing it into gear fully. Or incorrect pre-load on main or counter-shaft in box.

Which gear(s)? When does it kick our (under load)? Is it random or repeatable? Is there any grinding when this happens?

Well, here is my thoughts. Since it is popping out of gear on both the upper side (1,3) and the lower side (2,4) it does not sound like it is a torque or sync problem. I has a similar problem on a smaller tractor, not my to-30. What happened was a spring loaded ball bearing was used to hold a groved cam in place. The cam rotated with the shifting of gears. Anyways, the spring itself colapsed (broke in the middle) which allowed no tension on the cam and it would rotate whenever it wanted. I had to split the entire transaxle to just replace this little spring. Keep in mind, this was not on my large ferguson, but the operating parameters should be similar. So do some more research befor splitting.

Thank you mike for your thoughts I think you are right about spliting the tractor.
