Your theory isn't supported by the presence of Hindus in the US labor force; they've been taking jobs from meat-eating Americans for the past several decades, and most of those jobs are in fields that require a lot of intellect. Hindus are over-represented in medicine, engineering and science. Curiously though, you won't find very many Hindu septic tank pumpers or garbage collectors; those fields are almost exclusively the domain of carnivores.
