A cow can hide a calf like you can't believe. They can blend into even the shortest of vegetation and stay hid.
I would also consider a predator. I've lost a calf to coyotes before.
Also consider the latest fad in rural crime and that is the neighbor kids snatching calves to finance their drugs and alcohol. A day old calf at the sale barn brings a couple hundred bucks.
