I'm installing aftermarket firecrater style pistons in my 3oo and want to know if the cocave portion of the piston goes tword the spark plug side of the engine?

MPJ if you don't put the dome to the piston under the valves they will hit the head.

Your new pistons should have an arrow on them the arrom points towards the radiator or the front of the engine, I just put a set of fire craters in an (h) recently but I cant recall were the high end of the piston ended up. Look at your cylinder head, and make the step portion or high part of the piston match the head indentions.
