For general use 50 amps will be more than adequate. Realize you will be installing 240/120 volt, therefore your 120 volt loads can be split between the two phases. While you do not want to push it, you can load each phase to 80% of the rating, which is 40 amps on each leg. Installing a 100 amp panel with a 50 amp feed is perfectly acceptable.
I have 50 amps ran to my shop. I have a fridge that runs all the time, two window AC units that run most of the summer, lights and recpts. Ususally I have TV or radio on. Air compressor, Mig welder, saws, grinders, electric inpact and other tools do not cause a problem. You will not be runing all your tools at once.
The only problem you would have would be if you wanted to run a stick welder. Then you would not have enough ampacity for it and other stuff.
