How much of the clutch you should replace depends on what type of clutch you have. If it has a woven type lining that is oil contaminated you will need to replace at least the disk. When that type of lining gets oil soaked it is not possible to get it all out and reusing it will most likely lead to a jumpy clutch. If it has a ceramic/metallic type lining or pads it should be possible to flush the oil out of it and be reusable. The pressure plate when used with a woven lining should be reusable unless there is obvious damage. A pressure plate used with a ceramic/metallic lining most likely will be worn enough that the flywheel and cast plate will need to be resurfaced.
