When dad was growin spuds, he had these cutting tables. There was a large sloping table that would hold 100-200 lb of potatoes, with a chute that fed into a sharp knife sticking out of the table in front of the cutter (operator). The cutter would grab a potato from the chute and pass it over the knife to make the seed pieces, which then were dropped into a gunny sack directly below the knife. He hired mostly women to do the cutting, each table seated two. I believe he had two tables. Very low-tech, and pre-OSHA, but it worked.
