Would be tough since most of them are built into the vehicles PCM or BCM. So drilling holes in it could cause it not to run or have horrible electrical problems.
Some of you guys must wear tinfoil hats. If you don't like Onstar then don't pay for it and unplug the controls for it if you wish. Onstar is just an interface to what the vehicle is already monitoring/recording (pressures, check engine lights, airbags, etc)
