I've got two receipes one for red, one for white.
Red: 1 pound each of 80/20 hamburger and hot sausage, browned and drained. 1 whole sauted onion and 1 clove garlic sauted together in butter. Deglaze with cooking sherry. 2 qts of tomato juice, 1 can of tomato paste, 2 cans of chili hot beans, drained. 1 teaspoon each crushed red pepper, paprika, cocoa powder and chili powder. Simmer an hour. Serve with shredded cheese and crackers.
White: 4 skinless boneless chicken breasts chopped and cooked. 4 andoulle sausage, cooked. 1 big can great northern beans, 1 qt each chicken broth and water. 1 large jar green chili sauce. 1/4 cup tabasco. 1 tablespoon crushed red peper. 1 cup heavy cream. Simmer for an hour. Serve with cornbread.
