I made 8 gallons of persimmon wine a few years ago. I thought it was awful, in fact, it reminded me of syphoning gasoline. It sat down in the cellar for a couple of years until one day when we were butchering my neighbor wanted a taste of it. He drank a couple of water glasses full and couldn't find his butt with both hands. I helped him to his truck and sent a gallon home with him. He drank seven gallons of it in seven weeks. I decided to try it again and I couldn't believe how smooth it was. It was so clear you could read a newspaper through a gallon jug of it.
