Hoover Hogs (aka Nine banded Armadillo's) are fair eating if you can get past the smell. Dad was a Game Warden in Abilene, Texas in 50's & 60's and mom was a girl from the hills of East Tenn. She wanted to sample lots of the animals in Texas. We got the armadillo and finally got him skinned. Cooked like a pork roast with potatoes, carrots and onions was pretty tasty. Seemed to be awfully greasy. Should have seen the time that a skinned & dresssed rattlesnake started twitching when it hit the cold wash water. Mom was out the back door before the snake could drop from the counter to the floor. Yes, snake does taste like chicken but has lots and lots of bones. I figure that If you want something that tastes like chicken then get chicken. Lots of venison, antelope etc.
