Back in my Okie days we would quarter it, add a little butter and seasonings, place a thick slice of onion on it, wrap it in tin foil and bury it in the coals of the camp fire. Not bad, just make sure it gets cooked good. They carry some bad stuff if not healthy.
Also had opossum, all kinds of strange water fowl, turtles and several, umm.., things the SPCA would put a contract out on me for.
