Wife never had applebutter before she met me (it's not a German thing) and I had a jar I bought in the commissary. She liked it and we could get it now and then over the last 10 years or so. This year she decided to try making her own. She tried a small batch that turned out good and we now have about 30 pints and a few quart jars of it. Something I can't figure out is, the recipe called for so much vinegar that the whole house smells like it and I could smell it when I got out of my car 200 ft around the corner but you don't taste it in the AB. Not even the first stage before the sugar and spice. So, what was the purpose of the vinegar???
