Leipzig area was part of East Germany and different in some ways. Based on my area (and probably there also), the tire tracks you saw were from sprayers. Fields are probably much bigger in that area (guessing because a couple places in the old East had some humongous fields). In my area, if a piece of land can be planted (not all can), it is taken advantage of every sq meter (odd shaped fields). When you are up there looking down at all the different patches (1/2 acre to 5+) they may not be all farmed by the same person and you will very seldom if ever find one that is land locked. There are public access roads (not necessarily paved) everywhere through woods and fields.
