I used to write checks out to "cash" all the time. Back before the days of the ATM machine that was a common way to make a bank withdrawal.
If the check bounces, it doesn't matter whether it was made out to cash or made out to you. Either way your bank will charge YOU for the bad check. If his account is at a local bank, you might want to try to cash it there first. That way you'll spare yourself the bad check fee your bank will charge you.
