OK, it is admittedly weaker, but, do you need the strength in the job you're doing? I have a 50 year old exhaust hood in my house that was soldered. It's still together and looks good.
As to finishing, the SS shops use a straight line sander, like auto body shops use for fibergalss leveling, to restore the brushed finish, and a rotating nylon brush with valve grinding compound for final finishing.
