That would work, and would definitely get any trapped water out of the system. I understood from some articles I read that the DOT-3 will cause some rubber parts to swell (a good thing, since they will seal better) but the DOT-5 will not, so any old rubber parts should be replaced to ensure that when the parts that were swelled up relax to their original state that they don't leak. I think the thing that worries me the most is that somebody (maybe me if I forget) might top the system off with the wrong fluid. A label might be a real good idea to help prevent that.
