You can have a hand-written bill-of-sale for a receipt, no need for a check stub. Buyer gets to inspect the merchandise before buying, so he's not buying unseen goods. If buyer pays by check, the seller doesn't get to inspect the "cash". To me, "cash" means "cash", nothing else. If I can take his check to the bank for cash, so can he.
Just my understanding on the matter.
