You have that right about the pork!! Most people don't know what ham tastes like because all they have ever eaten is the water injected packaged stuff that tastes like plastic, from A@P or whoever. To be "ham" it has to be properly cured and aged. Nothing was ever better than sugar cured, salt perserved ham that was hung in the smoke house over winter to age. (without any smoke) I think soybean meal and other additives put in the slop has ruined the taste of the hog. Sure wish I had some good fried ham out of the hills of virgina with some redeye brown gravy or white sop again.
