One thought for combating winching them onto rollbacks or trailers is to leave a lowered, heavy and implement on it. Large plow or disk harrow for instance. It can be part of the Christmas decoration. Without it running to use the hydraulics it can be pretty hard to remove the implements and pretty hard to winch in with them still attached. Of course don't make it convenient to get a truck to it either.
Another thought comes to mind if we're talking a large tractor with power steering leave it with the wheels turned all the way one right or left. Hard to winch a tractor that's trying to turn. Assuming of course that they are like those I've seen in that they don't steer manually.
Lastly for the sneaky guys that carry plug wires with them an try to fix things. Put one of those rubber snakes on top the engine. Might make them think twice.
