Growing up, my best friend's dad was a go to your house butcher. He'd come to your place, slaughter and take it home to process. Always an adventure having dinner at his house. Pig's feet, pig ears, oxtail, tongue, heart, you get the idea.... Never had balls, kidneys, or brains, but got a taste for most everything else.
