If it has a cutout relay, it'll charge an 8 volt battery just fine, just not quite as fast as a six volt. If it's been retrofitted with an actual voltage regulator, it'll never quite charge an 8 volt battery all the way unless someone has tweaked the regulator.
There's really no reason to change to 8 volts...its generally a patch instead of fixing actual problems. A six volt system will start the tractor just fine if you make sure the starting system is in good shape. Biggest mistake people make is using battery cables that are too small. You need at least 1/0 or 2/0 cables on both the starter and ground sides. The 12 volt cables sold in typical auto parts stores are no where near heavy enough, and will result in the starter turning slow.
Be aware that if you do leave it at 8 volts, the life of the ignition points (assuming you have a distributor and not a magneto)and light bulbs will be greatly reduced.
