I certainly agree that there are problems in trusting the opinion of any single lawyer. As John T notes, most liability issues are very complex.
I was on the board of a non-profit housing company for years. We had several low-rent apartment buildings, all owned by the company. One lawyer insisted that we should set up subsidiary non-profit companies for each building, so a big lawsuit at one wouldn't affect the others. They spent hours consulting on how to set up this new model and what a great idea it was.
Some of the board members wanted a second opinion, so we got a different law firm to come in. And, you guessed it, they told us that it wouldn't matter at all a bunch of little companies set up to protect the big one would be ignored by the courts.
I've been involved with a few groups, and my first concern is usually how the group/club is legally organized and then what insurance does it carry.
