Grades of oil

I've read quite a few manuals on old tractors and engines, and when it comes to lubrication, they all recommend an old brand name oil without mentioning the SAE grade or weight. Is there some kind of conversion chart for these old brands of oil? Is there some general rule of thumb for engine oil and transmission oil? How about the cooling oil in an old Rumely? What kind of oil goes in the cooling system? Say you have a lubricator. Do you put in SAE 30, 40, 50 or higher? What about oils that cover a range of grades like 10w-40?
I really would appreciate a definite answer to this. I don't want anything to break because I put the wrong oil in my tractor.
