Several years ago my dad had a 6 bottom White 598 plow. He had about the same problem of it wanting to pull to the side on occaations. He figured that when you changed the width of cut you also changed the line of draft. For example, you set the draft so it is correct for a 16" cut then set it to cut 18" it will want to pull off side. At 20" cut was worse. If he set the draft for 18" cut and change to 16" it would pull off side in the other direction. What was needed was a way to change the draft at the same time as the width of cut changed.
As to the 588 plow, we had a neighbor that had one, but he ran the tractor in the furrow. Once the plow is set up correctly it should work good. Personally I don't like an on land hitch unless you are pulling 7 bottoms or more.
